The Review

My family is no stranger to the perils of gluten and wheat. My husband has both gluten and wheat allergies and suffers from leaky gut syndrome. His diet fluctuates with what his digestive system  allows for him to eat without intestinal pain, colitis and sometimes the inability to hold food down. Although the children and I don't have the severe allergies that my husband has, we have toned down our diet and our pantry, to meet many of his needs. Which in the past meant plenty of sacrifice or sneaking out to get foods that dad couldn't tolerate, in order to not make him feel bad. The rest of us do maintain a semi-vegetarian (we are primarily ova-lacto-pescetarian's) and our own "healthy menu's" are limited, without having the restriction of wheat to add to the mix.

The variety of food has changed throughout the years, even for vegetarians, with the availability of new products that are healthy and suit the need of people who want to refrain from eating meat (even if only part-time) and were also tasty. Now with more people having wheat and gluten allergies, we are also seeing a shift in the availability of savory and delicious gluten/wheat free foods. I am on the learning curve of figuring out how to make more palatable foods that meet the needs of my families wants and our necessities. Companies like gfreely make this transition a little bit easier and a lot of bit more tolerable.
    


We were given the wonderful opportunity to review the gfreely subscription box service. They are a company that delivers kind of "care" package of gluten free food, snacks and recipes to your front door every month as a kind of "try before you buy" method. It is through their monthly subscription, which starts at only $19/month. They make it their mission to find the healthiest and best gluten free foods and recipes that meet the high standards in food quality, taste and nutrition. Which totally takes the load off of you and your wallet, with having to trial and error.

 It is also interesting to know that each month they choose a new, unique theme for their food. So you are not only getting great food, that is healthy and delicious but it is always a surprise at your door each month! In our package we had yummy snacks that I personally couldn't keep my hands off!  We had a box OVER filled with delicious yummies to snack on and play with. I am definitely a believer in this subscription box service and in realizing that Gluten free can actually be tasty.

Without a doubt my family had favorites and these will be regular buys in our home from now on. My children loved the Sun Cups and what I found out in addition to them being Gluten Free is they are also Nut Free! The filling is made with Sunflower Butter (YUM!) instead of peanut butter, so even those little ones with nut allergies can enjoy their own version of "reeses". 

The main favorite was the Rice and Adzuki Bean Snack Chips. My DH and I practically fought over the last bits of the bag. It has just enough kick of spice to fulfill our craving palate. I personally passed on the pretzel sticks but that is because I don't favor the Cinnamon Toast flavoring they had. I'm more of a salty/savory person although my husband really enjoyed them. Opposingly, I enjoyed the Half Pops and he thought they were just "Okay".

Overall, my family was pleased with what we received in the gfreely. Gluten free products tend to be rather expensive, so I  really like the option that the subscription box gives you of being able to try the products before you invest in them. I also believe they offer a fair price for what you are receiving every month and knowing that you will have quality products delivered to your door.

      RECIPE: Braised Beef with Harissa and Lemon & Tomatoes

      This recipe is for Beef with Harissa and Lemon & Tomatoes. It was absolutely delicious and one of my families favorites of the night! The beef was absolutely tender, and the entire dish reminded us of chili with North African flavors in place of the typical Southwestern flavors.

      Ingredients
      • 2 pounds beef stew meat
      • 2 medium yellow onion, large diced
      • 1 lemon, rinsed, deseeded and chopped
      • 1 clove garlic, chopped
      • 1 can of Tomatoes
      • Saffron Road - Harissa Simmer Sauce
      • 1 teaspoon ground cumin
      • 1 tsp turmeric 
      • 1 teaspoon ground coriander
      • 1 package of 
      • 1 sprig fresh thyme
      • salt and pepper to taste 
       

      Brown beef in a large pan. Remove beef when browned and saute onions in the same pot. Add lemon, garlic, turmeric, cumin, coriander, and Harissa Simmer Sauce to onions and stir until aromatic. Return browned beef to pot. Add stock, thyme, and salt and pepper to taste.

      Serve over couscous or jasmine rice. Enjoy!

      RECIPE: Korean Stir Fry

      Broccoli isn't usually found in Korean stir fry or Korean cuisine, in general. Which I thought was super interesting since many dishes in American use the "Western Broccoli". I found that many shops in Korea actually import the florets, so that people can use them in dishes. That will be a research task for my children later to find out why broccoli is not native to Korea.

      Ingredients
      • 1 pound of rice noodles
      • 3 tsp sesame oil (I used sunflower oil)
      • 2 Tbsp extra-virgin olive oil
      • 1onion, thinly sliced
      • 2 cups of broccoli
      • 1 cup of baby corn 
      • 5 scallions, sliced into 1-inch pieces 
      • 2 carrots, peeled and cut
      • 1 Tbsp minced ginger
      • 1 Tbsp minced garlic
      • 1 pkg. Saffron Road - Korean Stir Fry
      • 2 Tbsp soy sauce, plus more as needed

      Cook the rice noodles according to package directions. In a very large mixing bowl, mix with sesame oil. In a large skillet or wok, heat oil over medium-high heat. Add broccoli, garlic, ginger, onions and carrots and cook for 3-4 minutes. Add Korean Stir Fry Simmer Sauce. Cook 3-4 minutes, until broth is mostly evaporated. Add soy sauce, mixing well to combine. Add soy sauce to taste as needed.

      Serve over noodles (or lightly mix in noodles). Enjoy!

      RECIPE: Chicken Lollipops

      I'm a lover of all things unique and borderlining abnormal. Especially when it comes to eating food. My palate is something to be bargained with and my stomach has mustered the courage to take on all kinds of food. In all of my food adventures, I still love the basics. Sandwiches, soups and especially finger foods.

      My children love finger foods also and balance between California rolls, fresh fruits and veggies and fun, crafty foods to fill their tummies during the day. I found one out of the ordinary dish, that was a "hit" in our home. Chicken lollipops. Don't run away in horror, it is not some weird mash-up of candy and chicken. It is quite a fun little dish that can be played with frying, breading and baking, grilling or any number of cooking techniques.


      The chicken lollipop is usually done with the parts of the wingettes. We went completely aggressive (and a little over ambitious) and used a chicken drumstick (the leg).

      Ingredients
      • 1 pkg of Chicken drumsticks
      • Salt & Pepper (to taste)
      • 1 pkg of Saffron Road - Thai Red Curry Simmer Sauce
      • Olive Oil (Canola or Sunflower) for frying

      Prep Materials
      Paring Knife
      Frying Pan (2)



      Wash the chicken leg. Remove the skin, film, feathers and any other unsightly items that you can't stand on your chicken. FYI, I'm a little OCD with cleaning chicken. I let the chicken soak in water for about 15 minutes, then I remove the yellow stuff around the ankle/gristle (usually on Perdue or Kroger chicken) and clean out the slimy film under the chicken skin.

      If I were going to fry the chicken, I would leave the skin on and clean around the skin for any signs of feathers or pore pockets (don't know exactly what they are called). However, because we are making chicken lollipops, I just removed the skin. I grabbed the skin from the top and pulled it down over the gristle, pulling it completely off. 


      Instructions
      1. Get a sharp paring knife and start cutting around the tendon of the chicken leg (just above the joint). 
      2. Cut any tendons (the thick white pieces that are hard to cut through) and start scraping the meat down the bone towards the top of the chicken. You can start pushing the meat down with your fingers also. 
      3. Make a small incision in the meat and invert the meat over the top of chicken leg, forming a "lollipop".
      4. Fill frying pan halfway with your choice of oil and heat oil in pan, until hot enough for frying 
      5. One at a time, take your chicken "lollipops" and sit them in the oil, holding the bone. You do this, so the chicken can form as a ball (or lollipop) at the top of the leg, before laying the chicken down into the oil. Do this for all of the chickens (depending on the size of your pan, add 7-10 chickens, you don't want to overcrowd the pan). Make sure after the ball forms, the leg lays in the oil so it cooks thoroughly, just as you would fry chicken. 
      6. Place chicken on a rack and pull out a new pan (or empty the oil into an oil-safe container and use the same pan). 
      7. Turn the heat on low and pour in the Saffron Road - Thai Red Curry Simmer Sauce into the pan. 
      8. Once the Simmer Sauce warms, add in your chicken lollipops, spooning the Simmer Sauce onto the cooked "lollipops"
      9. Take all of your Thai Red Curry Chicken lollipops and heat them in the oven on 350 for about 10 minutes.
      Enjoy with your choice of dressing (peanut dressing, cucumber yogurt or just plain) with a side of jasmine rice and salad! YUM!

      RECIPE: Aloo Palak (Spinach & Potatoes)

       So when you first see Aloo Palak, your immediate thought is not that this will be the most delicious green soupy looking concoction that you have ever tasted, but once you get a mouthful with Naan you realize that you should NEVER judge a book by its cover... or rather a food by its color. 
      When we lived in Virginia, we were near an Indian/Pakistani cuisine restaurant that used to have hoards of people coming in to try their chicken biryana, tikka masala and asking for heaping servings of Aloo Palak. My husband convinced me that it was delicious and I absolutely affirmed that was it wasn't easy being green but it certainly was delicious.
      This recipe of Aloo Palak isn't exactly authentic (I'm only dabbling in ethnic food but I'm certainly no native) but it is easy and gets similar results that quenched our craving). 

      Ingredients 
      2.65 lb spinach, fresh or frozen
      8 garlic cloves, roughly chopped
      4 inches fresh ginger, roughly chopped
      8 onions, chopped
      4 -8 green chili, chopped with seeds
      2 lb potatoes, peeled and cubed
      4 teaspoons turmeric
      16 tablespoons butter
      4 teaspoons curry
      2 teaspoons ground coriander
      2 teaspoons ground cumin
      4 tablespoons fresh cream (optional)
      4 to taste salt

      In a pan cook the spinach with garlic, ginger, onions and the green chilies for about 5-10 minutes. 2
      Remove from the pan and blend to a fine puree and keep aside (watch not to over puree the spinach). 
      In the meantime boil or bake the potatoes with salt and turmeric until done and set aside when done. Heat butter in a pan, fry cumin seeds along with spinach-onion paste and simmer for a few minutes. Stir in the cooked potatoes, curry, coriander and cumin powder and a little water if needed. Change pans if necessary and place in the oven for a few minutes (4-5), so the potatoes absorb the flavor. 

      Serve with warm Roti (or Naan) and Enjoy!
